Okay, by now you know how much of a cookie nerd I am (and if you’re new here, you’re about to get a strong dose of it), so you shouldn’t be surprised that I’m sharing this:

Ode to the Cookie

Ah, you scrumptious cookie
Of you I fantasize
The glorious gingersnap, the sweet sugar cookie
Flavours melding together as they dance
And skitter across my taste buds
Oozing sugary goodness.

Ah, you, scrumptious cookie
Your flooded icing smooth as silk
Enhancing your beauty with loving designs
Though almost too beautiful to sample,
I cannot deny myself the pleasure you bring
With each bite.

Ah, you, scrumptious cookie
As my hand reaches for more
My mouth waters, waiting in anticipation
For the first shock of sweetness
To eat you is an event of the senses
I sit, I sample, I sigh.

So, I have to italicize this just in case; my friend Michelle created that happy ode for me, and she just might be is my hero. (Thank you for the ode Michelle!). I could read a thousand tutorials on writing an ode, and I wouldn’t be able to come up with anything as clever as hers.
I can share a little how to on decorating these cherry pie cookies though, so here’s the second version for you. If you’d like to try the blue version I’ve posted a little how to here.
Decorating Cherry Pie Cookies

Gingerbread Dough and Royal Icing
I used my gingerbread dough recipe and you can find my favorite royal icing recipe here. The consistency of icing is key for easy decorating. Click here to see a YouTube video on finding the right icing thickness.

Step One:
Outline the pie plate shape with royal icing, using a #2 tip. For detailed decorating tips, this tutorial may be helpful for you.
Step Two:
With the same icing, flood, or fill in your shape.
Step Three:
Shake the cookie gently to help the icing smooth over.
Step Four:
Using red icing and a #1.5 or #2 piping tip, pipe small red dots for cherries. Leave spaces between each dot so that they can set as distinct dots. Let the icing dry for a minimum of 15 minutes.
Step Five:
Pipe more small red dots for cherries. Let the icing dry for a minimum of 15 minutes and fill in remaining gaps with red icing. Let the red icing dry for a few hours.
Step Six:
Using a #1.5 piping tip, pipe a layer of ivory icing to begin the base of the “crust”. Let that set for about 15 minutes.
Step Seven:
Pipe your lattice lines in one direction.
Step Eight:
Pipe your lattice lines in the opposite direction, pipe the top layer of the crust and you’re done!
Notes:
- The pie crust icing color was made by mixing ivory with a little yellow.
- It might add a nice tough to dust a little light brown lustre dust on the pie crust for a natural browned look.
