Easy Chocolate Frosting Recipe

Happy Wednesday! Today’s post is quick, as is this easy chocolate frosting recipe…

It’s so delicious and simple to make – it’s become a staple in the classes I teach, especially when we have an event to prepare for and need to make a bunch of recipes in a short amount of time.

I stumbled across it when our school was donated some books such as this 1976 Better Homes and Gardens cook book. Although the savoury recipes we’ve tried are delicious, it’s this chocolate frosting one which was found on a hand-written recipe card inside has been the bonus hidden treasure!

Fondant Apple Toppers:

The apples my high school students made were also simple to make – red, green and brown fondant formed in the shape of apples. Here’s a similar tutorial of how to make fondant pumpkins (just leave out the toothpick creases). The small leaf cutter is from this JEM cutter set. Hope you have fun making them too!

Easy Chocolate Frosting Recipe

Yield: Approx. 36 cupcakes

Ingredients

  • 2 cups (1 lb, 454 g) butter, room temperature
  • 1 1/2 cups (4.5 oz, 128g), cocoa powder*, sifted
  • 10 cups icing sugar** (40 oz, 1.13kg), sifted
  • 1 Tbs vanilla extract
  • 1/2 cup milk***
  • *Use the best quality cocoa powder you can
  • **a.k.a. confectioner's sugar, powdered sugar
  • ***preferably at least 2% milk

Instructions

  1. In the bowl of stand mixer, using a paddle attachment, whip butter and cocoa powder together until well incorporated.
  2. Add icing sugar, stir, and slowly pour in milk until mixed. Add in vanilla extract and mix.
  3. Using a rubber spatula, scrape down the sides of the bowl and whip on medium speed until light and fluffy (approximately 1 minute).

    these are so precious and the frosting looks so lickable! i bet there wouldn’t be much on my cupcakes if i made a bowl of the frosting haha 😉

    Can you believe that I have the same book? I have been using that recipie for years but I also add some leftover morning coffee to it as well.

    This is not about frosting, but more about the book. Does this particular edition have the chewy oatmeal cookie recipe using sorghum in it? I grew up with that particular recipe and to this day it is my favorite oatmeal cookie ever….has something to do with the sorghum (verses molasses)in it. It was so wonderful to come home from school to the smell of my Mom baking these cookies! And we could always count on them being in her holiday cookies ensemble. Love that sorghum based oatmeal cookie recipe!

    Lovely cupcakes as usual! I can’t wait to try this recipe tonight! Making cupcakes for a special friend’s last day at her job before making a big move to Texas. Have you doubled the recipe? I have a large cupcake order coming up and wondered if it doubles well. Thanks Marian!

    Thank you for including ingredient weights. I use a scale to measure rather than measuring cups, but most people I know don’t do it that way. I can convert to weight if I need to, but you saved me time (a precious commodity).

    Just made this recipe. Only 1/2 recipe (thanks for using weight measurements-it makes it so much easier). I frosted 30 cupcakes using the 1M tip rose pattern. The flavor is fantastic! Like homemade fudge! Thanks for sharing! This is a keeper! Easy and tastes great!

    Hi Marian, may I know what size (in oz.) of cupcake liners do you use when making cupcakes? I use the 3 oz.-size liners I normally see at stores but I don’t know, the cupcakes seem small after baking? Or perhaps it’s just how much I pour my cupcake batter? Most recipes say fill in each liner 3/4 cup full and I do but apparently, the cakes don’t rise over the liners. I just actually want my cupcakes to rise beyond the liner and look rich, that’s all. Any tips? Thank you. 🙂

      Hi Jayvee,
      Yes, mine don’t look large either (I using the same size you mentioned). It could be the recipe you’re using.
      If you try one of my recipes (who do rise, but not as much as cake mix batters do) and they still don’t rise, I would fill the liner more. I don’t think it’s that though (probably the recipe or that you’re overmixing), as I fill mine about 3/4 full too.
