Video Tutorial on How to Decorate Hedgehog Cookies (or Porcupine Cookies)
Rarely do I make the same cookie design twice. Making cookies mainly for family and friends and allows me this freedom, but once in a while I come upon a set that I can’t resist decorating again. Such was the case with these hedgehog (or porcupine, really) cookies. I made them a few years ago and then last week for Margaret of Blue Sugar Cookie Co. for a great cause. (Thank you Margaret!).
There’s something simply adorable about these guys, and let me tell you, the chocolate sprinkles I used on them taste so delicious! They’re the new gourmet dark chocolate confetti sprinkles by Ticings. They’re made with plant-based colors and are available for pre-order here.
The sprinkles are smaller and finer than the average chocolate sprinkle – can you see the difference between the sprinkles in the photo above and then the photo below of cookies I made a few years ago with chocolate sprinkles from Bulk Barn?
Next time I’ll be making them paired with these chocolate sugar cookies.

I found the hedgehog cookie cutter in an Ikea set, here. The large mushroom cutter is from Ecrandal, and I custom designed the mini mushroom cutter, which can be found in How Sweet is That?’s shop here.

It’s a common question! I find that it whips better and is “creamier” with the meringue powder, but there are some alternatives and people who just omit it.
