Golden Vanilla Dream Cupcake Recipe

Well happy May!

It’s been a while since I’ve posted (thanks to my web designer, Arthur, for creating an adorable, illustrated liquid measure conversions, the other day), as making sweets and photographing them is a little challenging during our home renovation, but I managed to borrow my sweet friend Kim’s kitchen (Thank you Kim!), to do some recipe testing and make rainbow-happy cupcakes, inspired by this mail from The TomKat Studio.

These moist, fluffy, golden-delicious, vanilla cupcakes, a recipe I’ve been toying around with for a while, are finally ready to share, and I hope you like them too.

Golden Vanilla Cupcakes Recipe

Golden Vanilla Dream Cupcake Recipe

Ingredients

  • 1 cup unsalted butter, at room temperature
  • 1 2/3 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cups buttermilk

Instructions

  • Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • In a mixer bowl fitted with a paddle attachment, beat butter with sugar until light and fluffy (a few minutes).
  • Beat in eggs, one at a time, beating well after each addition.
  • Beat in vanilla.
  • Whisk together flour, baking powder, baking soda and salt.
  • Stir dry mixture into wet (butter) mixture alternately with buttermilk, making 3 additions of dry ingredients and 3 of buttermilk.
  • Using an ice cream scoop or 1/4 cup measurer, scoop batter into a muffin tin lined with cupcake liners.
  • Bake for approximately 15-20 minutes, until cake tester (toothpicks or skewers work well too), inserted in centre comes out clean.
  • Let cool in muffin tins for about 5 minutes, then remove and let cool completely before adding icing.

Notes

Yield: Makes approximately 24 cupcakes.

The confetti sprinkles I found at a local store, Bulk Barn, but I also found them online here. A little secret for you… I took the time to take out all the purple and orange sprinkles with my decorating tweezers. (Yes, I really did. I know). It actually only took me about 10 minutes for this many sprinkles:

And I didn’t end up needing that many for 24 cupcakes. Just really wanted to match the stripes on the cute carnival cupcake cups and favor boxes.
