Well happy May!
It’s been a while since I’ve posted (thanks to my web designer, Arthur, for creating an adorable, illustrated liquid measure conversions, the other day), as making sweets and photographing them is a little challenging during our home renovation, but I managed to borrow my sweet friend Kim’s kitchen (Thank you Kim!), to do some recipe testing and make rainbow-happy cupcakes, inspired by this mail from The TomKat Studio.
These moist, fluffy, golden-delicious, vanilla cupcakes, a recipe I’ve been toying around with for a while, are finally ready to share, and I hope you like them too.

Golden Vanilla Cupcakes Recipe
Golden Vanilla Dream Cupcake Recipe
Ingredients
- 1 cup unsalted butter, at room temperature
- 1 2/3 cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 3 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/4 cups buttermilk
Instructions
- Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
- In a mixer bowl fitted with a paddle attachment, beat butter with sugar until light and fluffy (a few minutes).
- Beat in eggs, one at a time, beating well after each addition.
- Beat in vanilla.
- Whisk together flour, baking powder, baking soda and salt.
- Stir dry mixture into wet (butter) mixture alternately with buttermilk, making 3 additions of dry ingredients and 3 of buttermilk.
- Using an ice cream scoop or 1/4 cup measurer, scoop batter into a muffin tin lined with cupcake liners.
- Bake for approximately 15-20 minutes, until cake tester (toothpicks or skewers work well too), inserted in centre comes out clean.
- Let cool in muffin tins for about 5 minutes, then remove and let cool completely before adding icing.

The confetti sprinkles I found at a local store, Bulk Barn, but I also found them online here. A little secret for you… I took the time to take out all the purple and orange sprinkles with my decorating tweezers. (Yes, I really did. I know). It actually only took me about 10 minutes for this many sprinkles:
And I didn’t end up needing that many for 24 cupcakes. Just really wanted to match the stripes on the cute carnival cupcake cups and favor boxes.

Hi Michaela, Yes, you can. Just add a little vinegar to the mild (I know, sounds weird huh! I can’t remember how much… If you google, how to make home made buttermilk, or how to make buttermilk with milk and vinegar, the answer should come up.
