I don&#039;t know for sure as I&#039;ve never worked at Sprinkles or Ukrop&#039;s but it looks like you would just use a small palette knife to smooth the icing down.  Your icing can&#039;t be too think or it won&#039;t smooth over very well.  Try your usual recipe out, and if it doesn&#039;t smooth over well, thin out your icing with a bit of water and try again.</description>

I was wondering how you made your icing so perfect? I have experimented with piping the icing on, but it was not a big enough tip.  I am most interested in the cupcapes that have what looks to be a thick dollop of icing on top that has smooth edges and a flat top. Sort of like what you see on Sprinkles or Ukrop&#039;s cupcakes. Is it just a matter of putting a ton of buttercream on and then smoothing it until it achieves the desired result?</description>
